Garlic Butter Chicken Bites with Creamy Parmesan Pasta

Ingredients 📝 For the Chicken Bites:

1 lb chicken breast, cut into bite-sized pieces

2 tbsp cornstarch or flour

1 tsp garlic powder

Salt and black pepper to taste

2 tbsp butter

1 tbsp olive oil

2 cloves garlic, minced

Fresh parsley, chopped (for garnish)

For the Creamy Parmesan Pasta:

8 oz pasta (such as cavatappi or penne)

1 cup heavy cream

1 cup grated parmesan cheese

1 tbsp butter

Salt and black pepper to taste

Prepare the Chicken:

Season chicken pieces with garlic powder, salt, and pepper. Toss with cornstarch or flour to coat evenly.

Heat butter and olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 4-5 minutes per side.

Add minced garlic and sauté for another minute. Set chicken aside and keep warm.

Cook the Pasta:

In a pot of salted boiling water, cook pasta according to package directions. Drain and set aside.

Make the Creamy Sauce:

In the same skillet, melt 1 tbsp butter over medium heat. Pour in heavy cream and bring to a gentle simmer.

Stir in parmesan cheese until melted and smooth. Season with salt and black pepper to taste.

Add cooked pasta to the sauce and toss to coat.

Assemble:

Top the pasta with garlic butter chicken bites and sprinkle with chopped parsley and additional parmesan if desired.
