Louisiana Voodoo Fries
Ingredients:
6 medium russet potatoes
2 tbsp extra virgin olive oil
1–2 tbsp Cajun seasoning
¼ cup creamy ranch dressing (plus extra for dipping)
Creamy Cheese Sauce:
2 tbsp butter
2 tbsp flour
⅔ cup milk
2 cups shredded cheddar cheese
Instructions:
Prepare the Fries:
Wash, scrub, and pat dry potatoes. Peel and slice into thick fries (¾ inch x 3 inches).
Steam the Potatoes:
Boil 1 quart of water, season with 3 tbsp salt.
Using a basket or colander, steam potatoes over the simmering water for 10–12 minutes until tender but firm.
Coat and Bake:
Transfer potatoes to a bowl and drizzle with olive oil, tossing to coat evenly. Arrange in a single layer on a nonstick baking sheet.
Bake at 450°F for 10 minutes. Rotate the pan and bake another 5–10 minutes, watching closely to avoid burning.
Make the Cheese Sauce:
Melt butter in a saucepan over medium heat. Whisk in flour and milk until smooth. Add cheese and stir until fully melted and creamy.
Assemble:
Sprinkle Cajun seasoning over the baked fries and toss gently.
