MOUTHWATERING LEMON BAR COOKIE CUPS

Ingredients:
1 cup unsalted butter, softened
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar (for lemon filling)
1/4 cup lemon juice (freshly squeezed)
1 tablespoon lemon zest
1/4 cup powdered sugar (for dusting)

Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line with cupcake liners.
Make Cookie Dough: In a large bowl, cream together the softened butter and 3/4 cup granulated sugar until light and fluffy. Mix in the vanilla extract. Gradually add the flour and salt, mixing until combined.
Form Cookie Cups: Divide the cookie dough evenly among the muffin cups, pressing down to form a cup shape. Bake for 12-15 minutes or until lightly golden.
Prepare Lemon Filling: In a separate bowl, whisk together the eggs, 1 cup granulated sugar, lemon juice, and lemon zest until smooth.
Add Filling: Once the cookie cups are done, remove from the oven and pour the lemon filling into each cookie cup, filling them about 3/4 full.
Bake Again: Return to the oven and bake for an additional 15-18 minutes, or until the filling is set.
Cool and Dust: Allow to cool completely, then dust with powdered sugar before serving.
