One Pot Honey Garlic BBQ Chicken Pasta

Ingredients:

1 lb chicken breast, diced
2 tbsp olive oil
3 cloves garlic, minced
2 cups chicken broth
1 cup milk
1/2 cup barbecue sauce
2 tbsp honey
12 oz pasta (penne or rotini)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tsp paprika
1/2 tsp chili powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:

Cook the Chicken: Heat olive oil in a large pot over medium heat. Add diced chicken and season with paprika, chili powder, salt, and pepper. Cook the chicken until it is browned on all sides.
Sauté Garlic: Add the minced garlic to the pot and sauté for 1 minute until fragrant.
Add Liquids and Pasta: Stir in the chicken broth, milk, barbecue sauce, and honey. Bring the mixture to a boil, then add the pasta.
Simmer: Reduce the heat to low, cover the pot, and simmer for 12-15 minutes. Stir occasionally to prevent the pasta from sticking, and cook until the pasta is tender and the sauce has thickened.
Add Cheese: Once the pasta is cooked, stir in the shredded mozzarella and grated Parmesan cheese until melted and well combined.
Serve: Garnish with fresh chopped parsley and serve warm.
