Ingredients:
- 1 pound fresh green beans, trimmed
- 4 medium potatoes, diced
- 1 medium onion, chopped
- 4 slices of bacon, chopped
- 1 packet ranch dressing mix (about 1 ounce)
- 1 cup chicken broth
- Salt and pepper to taste
Instructions:
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
- In the same pot, add the chopped onion and cook until soft, about 3-4 minutes.
- Add the diced potatoes to the pot, stirring to coat in the bacon drippings. Cook for about 5 minutes.
- Add the trimmed green beans to the pot with the potatoes and onion.
- Sprinkle the ranch dressing mix over the top and pour in the chicken broth.
- Season with salt and pepper to taste, then stir everything together.
- Cover the pot and let it simmer on medium-low heat for about 20-25 minutes until the potatoes and beans are tender.
- Stir in the cooked bacon before serving. Enjoy!
Tip: For extra flavor, you can add a squeeze of lemon juice or some grated parmesan cheese just before serving!
