You havent had real ensaymada until youve had this classic version

Instructions:

  1. Prepare the Yeast Mixture:

In a small bowl, combine the instant yeast, 1 tbsp sugar, and 1/2 cup warm milk.
Stir well and let it sit for about 5-10 minutes until it becomes frothy. This means the yeast is activated.

  1. Combine Dry Ingredients:

In a large mixing bowl, add the bread flour, all-purpose flour, 1/2 cup sugar, powdered milk, and salt.
Whisk the ingredients together until well combined.

  1. Mix Wet Ingredients:

In another bowl, lightly beat the egg yolks. Then add the 1 cup of warm milk and mix until smooth.
Add the activated yeast mixture to the milk and egg yolk mixture, and stir to combine.

  1. Combine Wet and Dry Ingredients:

Pour the wet mixture into the bowl of dry ingredients.
Add the softened butter and mix everything together until a dough forms.
You can use a hand or stand mixer with a dough hook for this or knead by hand.

  1. Knead the Dough:

Knead the dough for 10-15 minutes until it becomes smooth and elastic. If the dough is sticky, add a little more flour, but avoid adding too much.

  1. First Rise:

Shape the dough into a ball, place it in a greased bowl, and cover with a clean cloth or plastic wrap.
Let it rise in a warm place for 1 to 1.5 hours, or until it doubles in size.

  1. Shape the Ensaymada:

Once risen, punch down the dough to release air bubbles.
Divide the dough into equal portions (about 12-16 pieces, depending on your desired size).
Roll each piece into a log and then coil it into a spiral shape.
Place each shaped dough into a greased muffin or ensaymada mold.

  1. Second Rise:

Cover the shaped dough with a clean cloth and let it rise again for 30-45 minutes or until they puff up.

  1. Prepare the Egg Wash:

Beat 1 egg with 1 1/2 tbsp of milk.
Brush the egg wash over the tops of the risen dough before baking.

  1. Bake the Ensaymada:

Preheat your oven to 180°C (356°F).
Bake the ensaymada for 20 minutes, or until the tops are lightly golden.

  1. Add Toppings:

While the ensaymada is still warm, brush the tops with softened butter or margarine, sprinkle with sugar, or top with grated cheese.

  1. Serve and Enjoy:

Serve warm and enjoy the super soft, moist ensaymada with your favorite hot beverage!
