Ingredients:
¾ cup powdered peanut butter (PB2)
4 oz plain fat-free Greek yogurt
2 tbsp sugar-free strawberry preserves or finely chopped fresh strawberries
80 sugar-free dark chocolate chips (Lily’s or similar)
Instructions:
In a bowl, mix powdered peanut butter, Greek yogurt, and strawberry preserves until it forms a dough-like consistency.
Roll mixture into small bite-sized balls and refrigerate for 15 minutes.
Melt chocolate chips in a microwave-safe bowl or double boiler.
Dip the peanut butter-strawberry balls into the melted chocolate, ensuring they’re fully coated.
Place dipped balls on parchment paper and refrigerate another 15 minutes until firm.
