Pork Chops & Scalloped Potatoes
A hearty, comforting one-pan dinner with tender pork chops baked over creamy, cheesy scalloped potatoes. Perfect for Sunday supper!
🛒 Ingredients
4 bone-in or boneless pork chops
4 medium potatoes, thinly sliced (about ⅛ inch thick)
1 small onion, thinly sliced
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons all-purpose flour
1½ cups milk (whole milk preferred)
½ cup heavy cream (optional for extra richness)
1 cup shredded cheddar cheese
½ teaspoon garlic powder
½ teaspoon paprika
1 teaspoon salt (divided)
½ teaspoon black pepper
Optional: ½ teaspoon dried thyme or rosemary
👩🍳 Instructions
1️⃣ Preheat & Prep
Preheat oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.
2️⃣ Season & Sear the Pork Chops
Pat pork chops dry.
Season both sides with salt, pepper, garlic powder, and paprika.
Heat olive oil in a skillet over medium-high heat.
Sear pork chops 2–3 minutes per side until golden brown (they will finish cooking in the oven).
Remove and set aside.
3️⃣ Make the Cream Sauce
In the same skillet, melt butter over medium heat.
Whisk in flour and cook 1 minute.
Gradually whisk in milk (and cream if using).
Cook until slightly thickened, about 3–4 minutes.
Stir in half of the shredded cheese.
Season with remaining salt and optional herbs.
4️⃣ Layer the Dish
Arrange half of the sliced potatoes in the baking dish.
Top with half of the sliced onions.
Pour half of the cream sauce over.
Repeat with remaining potatoes, onions, and sauce.
Place seared pork chops on top.
5️⃣ Bake
Cover with foil and bake for 45 minutes.
Remove foil, sprinkle remaining cheese over top, and bake uncovered another 15–20 minutes until potatoes are tender and pork reaches 145°F (63°C) internally.
Let rest 5–10 minutes before serving.
