Avocado & Egg Low-Carb Flatbread (Better Than Bread!)
Soft, cheesy, and perfect for sandwiches or breakfast — this healthy bread alternative is naturally low-carb and filling.
📝 Ingredients
2 ripe avocados
2 large eggs
½ cup almond flour (or ¼ cup coconut flour — coconut flour absorbs more moisture)
¼ cup shredded cheese (cheddar, mozzarella, or parmesan)
¼ cup finely chopped spinach or kale (optional)
½ teaspoon baking powder (optional, for fluffier texture)
Salt & black pepper to taste
👩‍🍳 Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Mash the avocados in a bowl until smooth and creamy.
Add eggs and whisk until fully combined.
Mix in dry ingredients
Stir in almond flour (or coconut flour), cheese, baking powder, salt, and pepper.
Fold in spinach or kale if using.
Shape the flatbreads
Scoop mixture onto the baking sheet and spread into small round flatbreads (about ¼–½ inch thick).
Bake for 15–20 minutes, or until golden and firm to the touch.
Cool slightly before removing from parchment. Serve warm or toasted.
