No-Bake Chocolate Oat Bars

No-Bake Chocolate Oat Bars (Chewy & Easy)
Fudgy chocolate layered with buttery oats — no oven needed!
Yields: 16 bars
Prep time: 15 minutes
Chill time: 1–2 hours
🛒 Ingredients
Oat Base & Topping:
1 cup (2 sticks) unsalted butter
½ cup packed brown sugar
1 teaspoon vanilla extract
3 cups old-fashioned rolled oats
¼ teaspoon salt
Chocolate Layer:
1 cup semi-sweet chocolate chips
½ cup creamy peanut butter
👩‍🍳 Instructions
1️⃣ Prepare the pan:
Line an 8×8-inch baking dish with parchment paper.
2️⃣ Cook the oat mixture:
In a saucepan over medium heat, melt butter and stir in brown sugar and salt.
Cook 2–3 minutes until smooth and slightly bubbly.
Remove from heat and stir in vanilla and oats until fully coated.
3️⃣ Press the base:
Press about ⅔ of the oat mixture firmly into the bottom of the pan.
4️⃣ Make the chocolate layer:
In a microwave-safe bowl, melt chocolate chips and peanut butter in 30-second intervals, stirring until smooth.
5️⃣ Layer it:
Spread chocolate mixture evenly over oat base.
6️⃣ Top & chill:
Crumble remaining oat mixture over the chocolate layer and gently press down.
Refrigerate 1–2 hours until firm.
7️⃣ Slice & serve:
Lift from pan and cut into squares.
