Apple Oatmeal Cake
Moist, warmly spiced, and packed with tender apples and hearty oats — perfect with coffee or as a cozy dessert.
🛒 Ingredients
For the Cake:
1 cup old-fashioned rolled oats
1 cup boiling water
½ cup unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon salt
1½ cups peeled and chopped apples (about 2 medium apples)
Optional Topping (Caramel Coconut Glaze):
¼ cup butter
½ cup brown sugar
2 tablespoons milk
½ cup shredded coconut
¼ cup chopped pecans
👩🍳 Instructions
1️⃣ Soak the Oats
In a bowl, pour boiling water over oats.
Let sit 15–20 minutes until softened.
2️⃣ Preheat
Preheat oven to 350°F (175°C).
Grease an 8×8-inch baking pan.
3️⃣ Mix Batter
Cream butter and both sugars until fluffy.
Beat in eggs and vanilla.
Stir in soaked oats (including any remaining liquid).
In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually mix dry ingredients into wet mixture.
Fold in chopped apples.
4️⃣ Bake
Spread batter evenly in prepared pan.
Bake 35–40 minutes, until a toothpick comes out clean.
5️⃣ Optional Glaze
While cake bakes, melt butter in a small saucepan.
Stir in brown sugar and milk; simmer 2 minutes.
Remove from heat and stir in coconut and pecans.
Spread over warm cake and broil 1–2 minutes until bubbly and lightly golden (watch closely!).
