Soft & Tender Vanilla Loaf Cake
Moist inside, golden crust outside, and lightly dusted with sugar — this classic loaf cake melts in your mouth!
🛒 Ingredients
2 cups (250g) all-purpose flour
1 cup (200g) sugar
½ cup (115g) unsalted butter, softened
½ cup (120ml) milk (room temperature)
3 large eggs (room temperature)
1 tablespoon vanilla extract
2 teaspoons baking powder
¼ teaspoon salt
Optional: 1 tablespoon sour cream or yogurt (for extra softness)
👩🍳 Instructions
1️⃣ Prepare
Preheat oven to 350°F (175°C).
Grease and line a loaf pan (8×4 or 9×5 inch).
2️⃣ Cream Butter & Sugar
Beat butter and sugar until light and fluffy (about 3–4 minutes).
Add eggs one at a time, mixing well after each addition.
Stir in vanilla.
3️⃣ Combine Dry Ingredients
In a separate bowl, whisk flour, baking powder, and salt.
4️⃣ Mix
Add dry ingredients to the butter mixture in 2–3 additions, alternating with milk.
Mix gently just until combined (don’t overmix).
Fold in sour cream/yogurt if using.
5️⃣ Bake
Pour batter into prepared pan and smooth top.
Bake 45–55 minutes or until a toothpick inserted in the center comes out clean.
6️⃣ Cool
Let cool in pan for 10–15 minutes.
Remove and cool completely on a wire rack.
Dust with powdered sugar if desired.
