🛒 Ingredients (Serves 3–4)
1½ lbs sirloin steak (or ribeye), cut into bite-sized cubes
1½ lbs baby potatoes, halved
3 tbsp olive oil (divided)
4 tbsp butter
5 cloves garlic, minced
1 tsp dried thyme (or rosemary)
½ tsp paprika
Salt & black pepper to taste
Fresh parsley, chopped (for garnish)
👩‍🍳 Instructions
🥔 1️⃣ Cook the Potatoes
Heat 2 tbsp olive oil in a large skillet over medium heat.
Add potatoes cut-side down.
Season with salt, pepper, and paprika.
Cook 12–15 minutes, stirring occasionally, until golden and fork-tender.
Remove from skillet and set aside.
🥩 2️⃣ Sear the Steak
Pat steak cubes dry (important for a good sear!).
Heat remaining 1 tbsp olive oil in the same skillet over high heat.
Add steak in a single layer (cook in batches if needed).
Sear 2–3 minutes per side until browned and cooked to your liking.
Remove steak and set aside.
🧄 3️⃣ Make the Garlic Butter
Lower heat to medium.
Add butter and minced garlic.
Cook 30–45 seconds until fragrant (don’t burn).
Stir in thyme.
🔥 4️⃣ Bring It Together
Return potatoes and steak to the skillet.
Toss everything in the garlic butter for 1–2 minutes.
🌿 Finish & Serve
Sprinkle with fresh parsley and serve immediately.
