Rustic Garlic Butter Braised Beef with Slow-Cooked Herb Potatoes

Ingredients:

1.2 kg beef chuck roast, cut into large chunks

500 g baby potatoes, halved

4 tablespoons butter

5 garlic cloves, minced

1 tablespoon olive oil

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon onion powder

1/2 teaspoon black pepper

1 teaspoon salt

1 tablespoon fresh parsley, chopped (for garnish)

Directions:

Heat olive oil in a skillet over medium-high heat. Sear the beef chunks for 2–3 minutes on each side until nicely browned. This step adds deep flavor to the final dish.

Place the baby potatoes in the bottom of the slow cooker, spreading them evenly to form the base layer.

Add the seared beef chunks on top of the potatoes.

In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for about 1 minute until fragrant.

Stir in the beef broth, Worcestershire sauce, smoked paprika, thyme, rosemary, onion powder, salt, and black pepper.

Pour the garlic butter mixture evenly over the beef and potatoes.

Cover the slow cooker with the lid and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef becomes incredibly tender and the potatoes absorb the rich flavors.

Once cooked, gently stir the beef and potatoes to coat them in the savory garlic butter sauce.

Garnish with freshly chopped parsley before serving.

Serve warm straight from the slow cooker for a comforting, homemade meal.
