Introduction

Ingredients
For the Creamy Grits
1 cup Grits
4 cups water or chicken broth
2 tablespoons Butter
1 cup shredded Cheddar cheese
½ cup milk or cream
½ teaspoon salt
¼ teaspoon black pepper
For the Fried Fish
2–3 fillets white fish (such as Tilapia or Catfish)
½ cup cornmeal
½ cup all-purpose flour
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
1 egg
2 tablespoons milk
Oil for frying
Optional Additions
Chopped green onions
Hot sauce or chili flakes
Crispy bacon bits
Fresh parsley
Instructions

  1. Cook the Grits
    In a saucepan, bring water or broth to a boil. Slowly whisk in the grits while stirring constantly. Reduce heat to low and cook for 15–20 minutes, stirring occasionally.
  2. Make Them Creamy
    Add butter, milk, and shredded cheddar cheese. Stir until melted and smooth. Season with salt and pepper.
  3. Prepare the Fish
    Pat the fish fillets dry. In a bowl, whisk together the egg and milk.
  4. Mix the Coating
    In another bowl, combine cornmeal, flour, paprika, garlic powder, salt, and pepper.
  5. Coat the Fish
    Dip each fish fillet in the egg mixture, then coat evenly with the cornmeal mixture.
  6. Fry the Fish
    Heat oil in a skillet to 175°C (350°F). Fry the fish for 3–4 minutes per side until golden brown and crispy.
  7. Drain
    Place fried fish on paper towels to remove excess oil.
  8. Serve
    Spoon creamy grits onto plates and place the crispy fried fish on top. Garnish with green onions or parsley.
    Tips for Success
    Use medium or stone-ground grits for better texture.
    Don’t overcrowd the pan while frying the fish.
    Add a little butter on top of the grits just before serving.
