Introduction
Loaded Broccoli Potato Soup is a rich, creamy comfort dish packed with tender Potato, fresh Broccoli, melted Cheddar cheese, and crispy Bacon. It’s hearty, filling, and perfect for a cozy lunch or dinner.
Ingredients
4 medium Potato, peeled and diced
2 cups Broccoli florets
4 slices Bacon, cooked and crumbled
1 small onion, diced
3 cloves Garlic, minced
3 cups Chicken broth
1 cup Heavy cream or milk
1½ cups shredded Cheddar cheese
2 tablespoons Butter
2 tablespoons flour
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped green onions (optional)
Optional Additions
½ cup sour cream for extra creaminess
½ teaspoon paprika
Extra cheese for topping
Croutons for crunch
Instructions

  • Cook the Bacon
    In a large pot, cook the bacon until crispy. Remove and set aside, leaving about 1 tablespoon of bacon fat in the pot.
  • Sauté Aromatics
    Add butter, onion, and garlic to the pot. Cook for 2–3 minutes until fragrant and soft.
  • Make the Base
    Stir in flour and cook for 1 minute to form a roux.
  • Add Broth and Potatoes
    Slowly pour in the chicken broth while stirring. Add diced potatoes and simmer for 10–12 minutes until tender.
  • Add Broccoli
    Stir in broccoli florets and cook for another 5 minutes until soft.
  • Add Cream and Cheese
    Reduce heat and stir in heavy cream and shredded cheddar cheese. Mix until smooth and creamy.
  • Finish the Soup
    Add most of the bacon pieces back into the soup. Taste and adjust seasoning.
  • Serve
    Ladle into bowls and top with remaining bacon, cheese, and green onions.
    Tips for Success
    Cut potatoes into small cubes so they cook faster.
    Use freshly shredded cheese for smoother melting.
    For thicker soup, mash some of the potatoes in the pot.
