Ingredients
For the Custard
2 cups unsweetened Almond milk (or regular milk)
3 tablespoons cornstarch
½ cup sugar substitute (e.g., Erythritol or Stevia)
2 large Egg yolk
1 teaspoon Vanilla extract
Pinch of salt
For the Pudding
4–5 ripe Banana, sliced
1 box sugar-free Vanilla wafers
1 cup sugar-free whipped topping (optional, for extra creaminess)
Optional Additions
Cinnamon or nutmeg for garnish
Sugar-free chocolate shavings
Chopped nuts for texture
Instructions

  • Prepare the Custard
In a medium saucepan, whisk together cornstarch, sugar substitute, and salt. Gradually add milk, stirring until smooth.
  • Cook the Custard
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens (about 5–7 minutes).
  • Add Egg Yolks
Temper the egg yolks by slowly whisking in a small amount of the hot custard. Then return the yolk mixture to the saucepan and cook for another 2 minutes. Remove from heat and stir in vanilla extract. Let cool slightly.
  • Layer the Pudding
In a serving dish or trifle bowl, layer:
    Sugar-free vanilla wafers
    Sliced bananas
    Custard
Repeat layers until all ingredients are used, finishing with custard on top.
  • Chill
Cover and refrigerate for 2–3 hours or overnight so flavors meld and wafers soften.
  • Serve
Top with sugar-free whipped topping and optional garnishes before serving.
    Tips for Success
Use ripe but firm bananas to avoid mushiness.
Chill long enough for the custard to set for the best texture.
For extra flavor, add a teaspoon of rum extract or almond extract.
