Corned Beef and Cabbage

Corned Beef and Cabbage
Introduction
Corned beef and cabbage is a hearty, comforting dish often associated with Irish-American cooking and family-style meals. Slow-cooked corned beef becomes tender and flavorful, while cabbage, potatoes, and carrots absorb the savory broth. It’s a simple one-pot meal perfect for a satisfying dinner.
Servings
4–6 servings
Ingredients
3–4 lb corned beef brisket with spice packet
10 cups water (or enough to cover the meat)
1 medium onion, quartered
3 cloves garlic, smashed
4 medium potatoes, peeled and cut into chunks
3 carrots, cut into large pieces
1 small head cabbage, cut into wedges
1 teaspoon black pepper
1 bay leaf (optional)
Optional Additions
1 tablespoon mustard seeds
1 teaspoon dried thyme
Parsley for garnish
Horseradish or mustard for serving
Instructions
Prepare the Corned Beef
Remove the corned beef from the package and rinse it under cold water to remove excess brine.
Cook the Meat
Place the corned beef in a large pot or Dutch oven. Add water to cover the meat. Add the spice packet, onion, garlic, pepper, and bay leaf.
Simmer
Bring to a boil, then reduce heat to low. Cover and simmer gently for about 2½–3 hours, or until the meat becomes tender.
Add the Vegetables
Add the potatoes and carrots to the pot and cook for 15 minutes.
Add the Cabbage
Add the cabbage wedges and cook another 10–15 minutes, until vegetables are tender.
Rest and Slice
Remove the corned beef from the pot and let it rest for 10 minutes. Slice the meat against the grain for the most tender texture.
Serve
Arrange sliced corned beef with the vegetables and spoon some broth over the top.
Tips for Success
Always slice corned beef against the grain to keep it tender.
Cooking low and slow helps break down the brisket for the best texture.
If you like extra flavor, cook it in half water and half beef broth.
