🧾 Ingredients
4 large potatoes (peeled)
1 small onion
2 large eggs
1/4 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper

Grate the potatoes & onion
Use a box grater or food processor.
Place the mixture in a clean towel and squeeze out as much liquid as possible (this is key for crispiness).
Make the batter
In a bowl, combine grated potatoes and onion with eggs, flour, salt, and pepper.
Mix until well combined.
Heat the oil
Add a thin layer of oil to a skillet and heat over medium-high.
Fry the pancakes
Scoop about 2–3 tablespoons of mixture per pancake into the pan.
Flatten slightly with a spoon.

Drain
