Old-Fashioned Rice Pudding
🧾 Ingredients
1 cup white rice (long-grain or medium-grain)
2 cups whole milk
1/2 cup heavy cream
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp ground cinnamon (optional)
1/4 cup raisins (optional)
👩🍳 Instructions
Cook the rice
In a pot, cook the rice in 2 cups water with a pinch of salt.
Bring to a boil, then simmer covered for 15 minutes until tender.
Add milk & cream
Stir in milk, heavy cream, and sugar.
Cook over medium-low heat, stirring often, for 15–20 minutes until thick and creamy.
Temper the eggs
In a bowl, beat the eggs.
Slowly add a few spoonfuls of the hot rice mixture into the eggs while whisking (this prevents scrambling).
Combine
Pour the egg mixture back into the pot.
Cook on low heat, stirring constantly, for 3–5 minutes until thickened.
Finish
Stir in vanilla, cinnamon, and raisins (if using).
Remove from heat.
Cool & serve
Serve warm or chilled (it thickens more as it cools).
