🍋 No-Bake Lemon Cheesecake Bars

🛒 Ingredients
Crust:
2 cups graham cracker crumbs
1/2 cup (115g) melted butter
2 tbsp sugar
Lemon Cheesecake Filling:
16 oz (450g) cream cheese, softened
3/4 cup powdered sugar
1/2 cup fresh lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
1 cup heavy whipping cream (cold)
Optional Topping:
Lemon slices or zest
Whipped cream
👩‍🍳 Instructions

  1. Make the crust
    In a bowl, mix graham cracker crumbs, melted butter, and sugar.
    Press firmly into a lined 8×8-inch (20×20 cm) pan.
    Chill in the fridge for 15–20 minutes to set.
  2. Prepare filling
    Beat cream cheese until smooth.
    Add powdered sugar, lemon juice, zest, and vanilla.
    Mix until creamy.
  3. Whip cream
    In a separate bowl, whip cold heavy cream until stiff peaks form.
  4. Combine
    Gently fold whipped cream into the lemon mixture until light and fluffy.
  5. Assemble
    Spread filling evenly over the chilled crust.
    Smooth the top.
  6. Chill
    Refrigerate for at least 4 hours (or overnight) until firm.
  7. Serve
    Slice into bars and garnish as desired.
