🍞 Mediterranean Cheesy Herb Quick Bread
🧾 Ingredients
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp black pepper
🧀 Add-ins
1 1/2 cups shredded cheese (mozzarella + feta or cheddar)
1/4 cup grated Parmesan
🥛 Wet Ingredients
2 large eggs
1 cup milk (or buttermilk)
1/3 cup olive oil
1/2 cup plain yogurt
🫒 Optional Mediterranean extras
1/3 cup sliced olives
1/4 cup sun-dried tomatoes (chopped)
2 tbsp fresh parsley or basil
👩🍳 Instructions
- Preheat
Set oven to 180°C (350°F)
Grease or line a loaf pan - Mix dry ingredients
In a bowl, whisk flour, baking powder, baking soda, salt, and spices - Mix wet ingredients
In another bowl, whisk eggs, milk, olive oil, and yogurt until smooth - Combine
Add wet mixture to dry ingredients
Stir gently (don’t overmix!)
Fold in cheese and optional add-ins - Bake
Pour batter into pan
Bake 40–50 minutes until golden and a toothpick comes out clean - Cool & serve
Let cool 10–15 minutes
Slice and enjoy warm or at room temp
