Classic Cabbage Soup


🥣 Classic Cabbage Soup
Ingredients:
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
3 cups green cabbage, chopped
2 carrots, sliced
2 celery stalks, chopped
1 can (14 oz / 400g) diced tomatoes
5–6 cups vegetable broth (or chicken broth)
1 tsp salt (adjust to taste)
½ tsp black pepper
1 tsp paprika
1 tsp dried thyme
1 bay leaf
Instructions:

  1. Sauté the base
    Heat olive oil in a large pot over medium heat.
    Add onion, carrots, and celery. Cook for 5 minutes until softened.
    Add garlic and cook 1 more minute.
  2. Add cabbage
    Stir in chopped cabbage and cook for 3–4 minutes until it starts to soften.
  3. Build the soup
    Add diced tomatoes, broth, and all seasonings (salt, pepper, paprika, thyme, bay leaf).
  4. Simmer
    Bring to a boil, then reduce heat and simmer for 25–35 minutes, until vegetables are tender.
  5. Finish
    Remove bay leaf, taste, and adjust seasoning.
