🥣 Classic Cabbage Soup
Ingredients:
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
3 cups green cabbage, chopped
2 carrots, sliced
2 celery stalks, chopped
1 can (14 oz / 400g) diced tomatoes
5–6 cups vegetable broth (or chicken broth)
1 tsp salt (adjust to taste)
½ tsp black pepper
1 tsp paprika
1 tsp dried thyme
1 bay leaf
Instructions:
- Sauté the base
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook for 5 minutes until softened.
Add garlic and cook 1 more minute. - Add cabbage
Stir in chopped cabbage and cook for 3–4 minutes until it starts to soften. - Build the soup
Add diced tomatoes, broth, and all seasonings (salt, pepper, paprika, thyme, bay leaf). - Simmer
Bring to a boil, then reduce heat and simmer for 25–35 minutes, until vegetables are tender. - Finish
Remove bay leaf, taste, and adjust seasoning.
