🥘 Beef Enchilada Casserole
🧾 Ingredients
1 lb (450 g) ground beef
1 small onion, chopped
2 cloves garlic, minced
1 packet taco seasoning (or homemade)
1 can (10 oz / 280 g) red enchilada sauce
1 can (14–15 oz / 400 g) diced tomatoes, drained
1 cup corn (fresh, frozen, or canned)
1 cup black beans, drained and rinsed
2 cups shredded cheddar or Mexican blend cheese
6–8 small flour or corn tortillas, cut into halves or strips
½ tsp cumin (optional)
Salt & pepper to taste
👨🍳 Instructions
Preheat oven
Set to 180°C (350°F). Grease a baking dish.
Cook the beef
In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
Add flavor
Stir in onion and garlic; cook 2–3 minutes until softened.
Add taco seasoning, diced tomatoes, corn, beans, cumin, salt, and pepper. Mix well.
Add sauce
Pour in enchilada sauce and let simmer for 3–5 minutes.
Layer the casserole
Spread a thin layer of beef mixture on bottom
Add tortillas
Add more beef mixture
Sprinkle cheese
Repeat layers, finishing with cheese on top
Bake
Cover with foil and bake 20 minutes.
Remove foil and bake another 10–15 minutes until cheese is bubbly.
Rest & serve
Let sit 5–10 minutes before slicing.
