Crunchy Cucumber with Chili & Herbs
🧾 Ingredients
2 large cucumbers (English or regular)
1–2 fresh red chilies, finely sliced (adjust to taste)
2 cloves garlic, minced
2 tbsp fresh cilantro, chopped
1 tbsp fresh parsley or mint, chopped (optional)
Dressing:
2 tbsp rice vinegar (or lemon juice)
1 tbsp soy sauce
1 tsp sugar or honey
1–2 tbsp olive oil or sesame oil
½ tsp salt (adjust to taste)
👨‍🍳 Instructions

  1. Prep the cucumbers
    Slice cucumbers into thin rounds or smash them lightly and cut into chunks for extra texture
    Optional: sprinkle lightly with salt and let sit 10 minutes, then drain excess water (keeps them extra crunchy)
  2. Make the dressing
    In a bowl, mix vinegar, soy sauce, sugar, oil, and salt until well combined
  3. Combine
    Add cucumbers, chili, garlic, and herbs to the bowl
    Toss everything together until evenly coated
  4. Chill (optional but better)
    Let sit for 10–15 minutes to absorb flavor
  5. Serve
    Serve cold or at room temperature
    🌟 Tips
    Add toasted sesame seeds for extra flavor
    Use chili flakes instead of fresh chili if needed
    A splash of lime juice gives it a brighter taste
