Healthy Coconut Muffins (3 Ingredients)
Soft, lightly sweet, and flourless
🧾 Ingredients (Makes 6–8 muffins)
2 cups (160 g) unsweetened shredded coconut
2 ripe bananas (well mashed) 🍌
2 large eggs
👩‍🍳 Instructions
Preheat oven
Set to 180°C (350°F)
Line or grease a muffin tin
Mash & mix
In a bowl, mash bananas until smooth
Add eggs and whisk until combined
Stir in shredded coconut until fully mixed
Fill muffin cups
Spoon mixture evenly into muffin tin
Press lightly to shape
Bake
Bake for 18–22 minutes, until golden and set
Cool
Let cool for 10 minutes before removing
✨ Tips
Use very ripe bananas for natural sweetness
Add a pinch of cinnamon or vanilla for extra flavor (optional)
If mixture feels too dry, add 1–2 tbsp milk
