🥮 Pecan Sandies (Makes about 24 cookies)
🧾 Ingredients
1 cup (225 g) unsalted butter, softened
1/2 cup (100 g) granulated sugar
1/4 cup (50 g) powdered sugar
1 teaspoon vanilla extract
2 cups (250 g) all-purpose flour
1/4 teaspoon salt
1 cup (120 g) pecans, finely chopped

Cream butter & sugars
In a large bowl, beat the butter, granulated sugar, and powdered sugar until light and fluffy.
Add vanilla
Mix in the vanilla extract.
Combine dry ingredients
In another bowl, whisk together flour and salt. Gradually add to the butter mixture and mix until just combined.
Add pecans
Fold in the chopped pecans evenly.
Shape cookies
Roll dough into 1-inch balls and place on a lined baking sheet. Flatten slightly with your hand or a fork.
Chill (optional but recommended)
Chill dough for 20–30 minutes for better texture.
Bake
Bake in a preheated oven at 175°C (350°F) for 12–15 minutes, or until edges are lightly golden.
Cool
Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack.

For extra sweetness, dust with powdered sugar after baking
