Creamy Egg & Cheese Pasta
🧾 Ingredients (2–3 servings)
250 g pasta (spaghetti, fettuccine, or penne)
2 large eggs
1/2 cup (50 g) grated cheese (Parmesan or any hard cheese)
1/2 cup (120 ml) heavy cream (optional, for extra creaminess)
2 cloves garlic, minced
1 tbsp butter or olive oil
Salt & black pepper to taste
1/4 cup pasta cooking water (reserved)
Optional add-ins:
Cooked chicken or beef
Mushrooms
Spinach
Crispy bacon
👨🍳 Instructions
- Cook the pasta
Boil salted water and cook pasta until al dente.
Reserve 1/4 cup of pasta water, then drain. - Prepare the sauce base
In a bowl, whisk together:
eggs
grated cheese
black pepper
Set aside. - Sauté garlic
In a pan, heat butter or oil.
Add garlic and cook for about 30 seconds (don’t burn). - Combine everything
Add hot pasta to the pan and toss.
Remove pan from heat (important!).
Pour in the egg & cheese mixture while stirring quickly. - Make it creamy
Add a splash of reserved pasta water and/or cream.
Stir continuously until a smooth, creamy sauce forms (no scrambling). - Serve
Taste and adjust salt/pepper.
Top with extra cheese and serve immediately.
💡 Tips for success
Remove from heat before adding eggs to avoid scrambling
Use hot pasta to gently cook the eggs into a sauce
Add pasta water gradually for perfect consistency
Use freshly grated cheese for best melting
