Grammie’s Coconut Pie
🧾 Ingredients
1/2 cup (115 g) melted butter
3/4 cup (150 g) sugar
1/2 cup (65 g) all-purpose flour
2 cups (480 ml) milk
4 large eggs
1 tsp vanilla extract
1 1/2 cups (120 g) shredded coconut (sweetened or unsweetened)
1/4 tsp salt
👨‍🍳 Instructions

  1. Preheat & prepare
    Preheat oven to 180°C (350°F).
    Grease a 9-inch (23 cm) pie dish.
  2. Mix everything
    In a large bowl, whisk together:
    melted butter
    sugar
    eggs
    milk
    vanilla
    Add flour and salt, whisk until smooth.
    Stir in shredded coconut.
  3. Bake
    Pour mixture into the prepared pie dish.
    Bake for 45–55 minutes until:
    top is golden
    center is set (slightly firm, not liquid)
  4. Cool
    Let cool completely—this helps it set into layers:
    light crust on bottom
    creamy custard center
    coconut topping
    🍽️ Serving
    Serve at room temperature or chilled
    Optional: top with whipped cream or a sprinkle of toasted coconut
