Cottage Cheese Pizza Bites
Ingredients
1 cup cottage cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 egg
1/2 cup all-purpose flour (or almond flour for low-carb)
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp Italian seasoning
1/2 cup pizza sauce
1/2 cup mini pepperoni (or chopped regular pepperoni)
Optional: chopped bell peppers, olives, or mushrooms
Instructions
1️⃣ Preheat Oven
Preheat your oven to 180°C (350°F).
Line a baking tray or grease a mini muffin tin.
2️⃣ Make the Batter
In a bowl, mix cottage cheese, egg, and mozzarella.
Add flour, Parmesan, baking powder, salt, and Italian seasoning.
Stir until combined into a thick batter.
3️⃣ Assemble
Spoon batter into muffin tin (about 3/4 full).
Add a small spoon of pizza sauce on top.
Sprinkle pepperoni and any extra toppings.
4️⃣ Bake
Bake for 15–20 minutes, until golden and set.
5️⃣ Cool & Serve
Let cool slightly before removing.
Serve warm (great with extra pizza sauce for dipping!).
