Sweet Mexican Pancakes (Hotcakes Dulces)
🧾 Ingredients
1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1 egg
3/4 cup milk
1 tsp vanilla extract
1 tbsp melted butter (plus more for cooking)

  1. Mix Dry Ingredients
    In a bowl, whisk together:
    flour
    sugar
    baking powder
    baking soda
    salt
    cinnamon
  2. Mix Wet Ingredients
    In another bowl, whisk:
    egg
    milk
    vanilla extract
    melted butter
  3. Combine
    Pour wet ingredients into dry ingredients.
    Mix gently until just combined (don’t overmix—small lumps are fine).
  4. Cook the Pancakes
    Heat a non-stick pan or griddle over medium heat.
    Lightly grease with butter.
    Pour about 1/4 cup batter for each pancake.
    Cook until bubbles form on top (about 2–3 minutes).
    Flip and cook another 1–2 minutes until golden.
