Better Than Pizza Tortilla Bake
🧾 Ingredients:
3 tortillas, cut into thin strips
1–2 tomatoes, sliced
100 g cheese, grated (mozzarella or cheddar work great)
1/2 bell pepper, sliced
3 eggs
150 ml milk (about 2/3 cup)
Salt, to taste
Black pepper, to taste
50 g fresh parsley, chopped
👩‍🍳 Instructions:

  1. Prep the base
    Preheat oven to 180°C (350°F)
    Lightly grease a baking dish or pan
  2. Arrange tortilla strips
    Spread the tortilla strips evenly in the dish
    Add sliced tomatoes and bell peppers on top
  3. Add cheese
    Sprinkle grated cheese evenly over everything
  4. Make the egg mixture
    In a bowl, whisk together:
    Eggs
    Milk
    Salt & pepper
  5. Assemble
    Pour the egg mixture evenly over the tortilla mixture
    Gently press down so the strips soak up the liquid
  6. Bake
    Bake for 25–30 minutes until set and golden on top
  7. Finish
    Sprinkle fresh parsley on top before serving
    ✨ Tips & Variations:
    Add cooked chicken, tuna, or minced beef for extra protein
    Sprinkle oregano or Italian herbs for more “pizza flavor”
    Add olives or onions for a Mediterranean twist
    Want it crispy? Bake 5 extra minutes
