High Protein Blueberry Streusel Muffins
🧾 Ingredients
🧁 Muffin Batter:
1 cup (125 g) all-purpose flour
1/2 cup (60 g) oat flour (or blended oats)
1 scoop (25–30 g) vanilla or unflavored protein powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (100 g) sugar or honey/maple syrup
2 eggs
1/2 cup (120 g) Greek yogurt (adds protein & moisture)
1/4 cup (60 ml) milk
1/4 cup (60 ml) oil or melted butter
1 tsp vanilla extract
1 cup (150 g) fresh or frozen blueberries
🍪 Streusel Topping:
1/3 cup (40 g) oat flour or all-purpose flour
2 tbsp brown sugar or sweetener
2 tbsp butter, melted
2 tbsp rolled oats
1/2 tsp cinnamon
👩‍🍳 Instructions

  1. Preheat oven
    Preheat to 180°C (350°F)
    Line a muffin tin with paper liners
  2. Make streusel
    Mix flour, sugar, oats, and cinnamon
    Stir in melted butter until crumbly
    Set aside
  3. Mix dry ingredients
    In a bowl, whisk:
    Flour
    Oat flour
    Protein powder
    Baking powder & soda
    Salt
  4. Mix wet ingredients
    In another bowl, whisk:
    Eggs
    Sugar
    Greek yogurt
    Milk
    Oil
    Vanilla
  5. Combine
    Add dry ingredients to wet and mix gently
    Fold in blueberries (don’t overmix)
  6. Fill & top
    Divide batter into muffin cups (about 3/4 full)
    Sprinkle streusel generously on top
  7. Bake
    Bake for 18–22 minutes until golden and a toothpick comes out clean
  8. Cool
    Let cool for 10 minutes before serving
    ✨ Tips:
    Toss blueberries in a little flour to prevent sinking
    Use whey-casein blend protein for best texture
    Add lemon zest for extra freshness 🍋
    For extra protein: add 1–2 tbsp chia seeds
