Low Carb Cheesy Stuffed Meatloaf Bites
🧾 Ingredients:
🥩 Meat Mixture:
500 g (1 lb) ground beef
1/2 cup almond flour (low-carb binder)
1/4 cup grated parmesan cheese
1 egg
2 cloves garlic, minced
1/4 cup onion, finely chopped
1 tbsp ketchup (optional, use sugar-free for keto)
1 tsp Worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp dried oregano or Italian seasoning
🧀 Filling:
100 g mozzarella cheese, cut into small cubes
🍅 Optional Glaze:
2 tbsp sugar-free ketchup
1 tsp mustard
👩‍🍳 Instructions:

  1. Preheat oven
    Preheat to 190°C (375°F)
    Line a baking sheet or grease a muffin tin
  2. Make the meat mixture
    In a large bowl, combine:
    Ground beef
    Almond flour
    Parmesan
    Egg
    Garlic & onion
    Ketchup & Worcestershire
    All seasonings
    Mix until just combined (don’t overmix)
  3. Form the bites
    Take a small portion of meat
    Flatten it in your hand
    Place a cube of mozzarella in the center
    Wrap meat around it and roll into a ball
  4. Arrange
    Place meatloaf bites on baking sheet or in muffin tin
  5. Add glaze (optional)
    Brush tops lightly with ketchup + mustard mixture
  6. Bake
    Bake for 20–25 minutes until cooked through
    Optional: broil 2–3 minutes for a caramelized top
  7. Rest & serve
    Let cool slightly before serving (cheese inside will be hot!)
    ✨ Tips:
    Use ground turkey or chicken for a lighter version
    Add chopped spinach or herbs for extra flavor
    Want extra cheesy? Mix shredded cheese into the meat too
    Air fryer option: cook at 180°C for 12–15 minutes
