Southern Corn Casserole
🧾 Ingredients:
1 can (15 oz / ~425 g) whole kernel corn, drained
1 can (15 oz / ~425 g) cream-style corn
1 cup sour cream
1/2 cup (115 g) unsalted butter, melted
1 box (8.5 oz / ~240 g) corn muffin mix (like Jiffy)
1 cup shredded cheddar cheese (optional, but recommended)
2 large eggs (optional for a firmer texture)
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
👩🍳 Instructions:
Preheat oven to 180°C (350°F). Grease a baking dish (about 9×9 inch / 23×23 cm).
Mix wet ingredients
In a large bowl, combine:
Whole corn
Creamed corn
Sour cream
Melted butter
Add dry & extras
Stir in:
Corn muffin mix
Eggs (if using)
Cheese (if using)
Salt and pepper
Mix until just combined (don’t overmix).
Bake
Pour into the prepared dish and spread evenly.
Bake for 45–55 minutes, or until golden brown and set in the center.
Cool slightly & serve
Let it rest for about 5–10 minutes before serving.
🔥 Tips:
Add diced jalapeños for a spicy kick 🌶️
Mix in cooked bacon for extra flavor
For a crispier top, sprinkle extra cheese during the last 10 minutes
