Cauliflower Broccoli Salad
🧾 Ingredients:
🥗 Salad:
2 cups broccoli florets (bite-sized)
2 cups cauliflower florets
1/2 cup red onion, finely chopped
1/2 cup shredded carrots
1/2 cup cooked bacon, crumbled (optional)
1/2 cup shredded cheddar cheese
1/3 cup sunflower seeds or chopped nuts (almonds/walnuts)
1/3 cup dried cranberries or raisins
🥣 Creamy Dressing:
1/2 cup mayonnaise (or Greek yogurt for lighter version)
2 tbsp sour cream (optional)
1 tbsp apple cider vinegar or lemon juice
1–2 tbsp honey or sugar
Salt & black pepper, to taste
👩‍🍳 Instructions:

  1. Prep vegetables
    Wash and cut broccoli and cauliflower into small florets
    For a softer texture: blanch in boiling water for 1–2 minutes, then cool (optional)
  2. Make dressing
    In a bowl, whisk together:
    Mayo (or yogurt)
    Sour cream
    Vinegar/lemon juice
    Honey/sugar
    Salt & pepper
  3. Combine
    In a large bowl, add:
    Broccoli
    Cauliflower
    Onion
    Carrots
    Bacon (if using)
    Cheese
    Seeds/nuts
    Cranberries
    Pour dressing over and toss well
  4. Chill
    Refrigerate for 30–60 minutes before serving (best flavor!)
    ✨ Tips:
    Add diced apples for sweetness 🍏
    Use roasted broccoli/cauliflower for deeper flavor
    Make it vegetarian by skipping bacon
    Adjust sweetness to taste
