Chicken & Potato Casserole
🧾 Ingredients:
4 eggs
Salt & black pepper, to taste
100 ml cream (20–30%)
1 onion, finely chopped
5 potatoes, peeled & thinly sliced
2 chicken fillets, diced
1 tsp sweet paprika (or to taste)
1 tomato, thinly sliced
150 g mozzarella cheese, shredded
2 tbsp vegetable oil
👩🍳 Instructions:
- Preheat oven
Preheat to 180°C (350°F)
Lightly grease a baking dish - Cook chicken & onion
Heat oil in a pan
Sauté onion until soft
Add diced chicken, salt, pepper, and paprika
Cook for 5–7 minutes until lightly browned (not fully cooked) - Prepare egg mixture
In a bowl, whisk:
Eggs
Cream
Pinch of salt & pepper - Assemble casserole
Layer half of the sliced potatoes in the dish
Add cooked chicken & onion mixture
Add remaining potatoes on top
Pour egg-cream mixture evenly over everything
Arrange tomato slices on top
Sprinkle shredded mozzarella - Bake
Cover with foil and bake for 35 minutes
Remove foil and bake another 15–20 minutes until golden and potatoes are tender - Rest
Let sit for 5–10 minutes before serving
🥗 Garlic Sauce Salad
🧾 Ingredients:
2 cups lettuce or chopped salad mix
1 cucumber, sliced
1 tomato, chopped
2 tbsp yogurt or mayonnaise
1–2 cloves garlic, minced
1 tbsp lemon juice
Salt & pepper
👩🍳 Instructions:
Mix yogurt (or mayo), garlic, lemon juice, salt & pepper
Toss with vegetables just before serving
✨ Tips:
Slice potatoes thin for even cooking
Add mushrooms or spinach for extra veggies
Swap mozzarella with cheddar for stronger flavor
For crispier top → broil 3–5 minutes
