Cream Cheese Cranberry Loaf
🛒 Ingredients:
For the loaf:
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter (softened)
200 g cream cheese (softened)
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 ½ cups fresh or frozen cranberries (do not thaw if frozen)
2 tablespoons milk
Optional glaze:
1 cup powdered sugar
1–2 tablespoons milk or lemon juice
👩🍳 Instructions:
Preheat oven:
Set to 175°C (350°F). Grease and line a loaf pan.
Mix dry ingredients:
In a bowl, whisk together flour, baking powder, baking soda, and salt.
Cream butter & cheese:
In another bowl, beat butter, cream cheese, and sugar until light and fluffy.
Add eggs & vanilla:
Beat in eggs one at a time, then mix in vanilla.
Combine:
Gradually add dry ingredients to the wet mixture. Add milk and mix until just combined.
Add cranberries:
Fold in cranberries gently.
Bake:
Pour batter into loaf pan and smooth top.
Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
Cool:
Let cool in the pan for 10–15 minutes, then transfer to a rack.
Glaze (optional):
Mix powdered sugar with milk or lemon juice and drizzle over cooled loaf.

Toss cranberries in a little flour before adding to prevent sinking.
