Baked Meat & Potato Casserole with Mushrooms & Cheese
🛒 Ingredients:
1 kg ground meat (beef, chicken, or mixed)
60 g breadcrumbs
1 egg
1 carrot (grated)
1 green onion (chopped)
1 red onion (chopped)
100 g sour cream
80 g mayonnaise
1 garlic clove (minced)
Fresh dill (chopped)
300 g mushrooms (sliced)
200 g mozzarella cheese (shredded)
➕ Also needed (for the “potato base”):
3–4 medium potatoes (thinly sliced or grated)
Salt & black pepper to taste
1–2 tablespoons oil or butter
👩‍🍳 Instructions:

  1. Prepare the meat mixture:
    In a large bowl, combine:
    Ground meat
    Breadcrumbs
    Egg
    Grated carrot
    Green onion & half of the red onion
    Salt & pepper
    Mix well until fully combined.
  2. Prepare the potatoes:
    Peel and thinly slice or grate the potatoes
    Season lightly with salt and pepper
  3. Cook mushrooms:
    Heat a little oil in a pan
    Sauté remaining red onion for 2–3 minutes
    Add mushrooms and cook until soft and lightly browned
    Season with salt & pepper
  4. Make the creamy sauce:
    In a bowl, mix:
    Sour cream
    Mayonnaise
    Garlic
    Dill
  5. Assemble the casserole:
    Preheat oven to 180°C (350°F)
    Grease a baking dish
    Layer half the potatoes on the bottom
    Spread the meat mixture evenly over potatoes
    Add the mushroom mixture on top
    Spread remaining potatoes
    Pour the creamy sauce evenly over everything
    Sprinkle mozzarella cheese on top
  6. Bake:
    Cover with foil and bake for 45 minutes
    Remove foil and bake another 15–20 minutes until golden and bubbly
  7. Serve:
    Let rest 10 minutes before slicing
    Garnish with extra dill if desired
    💡 Tips:
    Use a mix of beef + lamb for richer flavor
    Add a pinch of paprika or chili flakes for heat 🌶️
    Slice potatoes thin so they cook evenly
