Mojo Potatoes (Crispy Seasoned Potato Slices)
These crunchy, flavorful potato rounds are inspired by the famous seasoned wedges served at places like Shakey’s Pizza — crispy outside, tender inside, and packed with bold spices.
🧾 Ingredients
4 large russet potatoes (washed, skin on)
1 cup all-purpose flour
1 cup milk (or buttermilk for extra flavor)
1 teaspoon salt
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper
½ teaspoon chili powder (optional)
Oil for frying
👩🍳 Instructions
1️⃣ Slice the Potatoes
Cut potatoes into ¼-inch thick rounds.
Soak in cold water for 20–30 minutes.
Drain and pat completely dry.
2️⃣ Prepare Coating
In one bowl: pour milk (or buttermilk).
In another bowl: mix flour, salt, paprika, garlic powder, onion powder, pepper, and chili powder.
3️⃣ Coat the Potatoes
Dip each potato slice into milk.
Dredge in seasoned flour, pressing lightly to coat well.
Place on a tray and let sit 5 minutes (helps coating stick).
4️⃣ Fry
Heat oil to 350°F (175°C).
Fry in batches for 4–5 minutes, turning once, until golden brown and crispy.
Drain on paper towels.
Sprinkle with extra salt while hot.
🔥 Oven / Air Fryer Option
Oven:
Preheat to 425°F (220°C).
Spray coated potatoes with oil.
Bake 25–30 minutes, flipping halfway.
Air Fryer:
Spray lightly with oil.
Cook at 380°F (193°C) for 12–15 minutes, flipping halfway.
