Egg & Turkey Bacon Avocado Sliders

Ingredients:

6 hard-boiled eggs, peeled

6 thin slices reduced-fat Swiss cheese (or light cheddar)

3 slices turkey bacon, cooked crisp

½ ripe avocado

½ tsp lime juice

¼ tsp smoked paprika

Salt and pepper to taste

Toothpicks for assembly

Instructions:

Mash avocado in a small bowl or food processor. Add lime juice, smoked paprika, and a pinch of salt. Blend until smooth.

Slice each hard-boiled egg in half lengthwise.

Place one slice of cheese on the bottom half of each egg.

Top with ½ slice of cooked turkey bacon.

Add a dollop of the avocado mixture over the bacon.

Close the slider with the top half of the egg. Secure with a toothpick.

Sprinkle lightly with salt and pepper and serve immediately.
