Ingredients

2 cups sweet corn kernels (fresh, grilled, or canned and drained)

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely diced

1/2 cucumber, diced

1/4 cup fresh cilantro, chopped

For the Dressing

3 tablespoons olive oil

2 tablespoons fresh lime juice

1 teaspoon honey

1/2 teaspoon chili flakes

1/2 teaspoon salt

1/4 teaspoon black pepper

Directions
Step 1: Prepare the Vegetables

Place the corn kernels, diced avocado, cherry tomatoes, red onion, cucumber, and chopped cilantro in a large mixing bowl.

Step 2: Make the Dressing

In a small bowl, whisk together olive oil, lime juice, honey, chili flakes, salt, and black pepper until well combined.

Step 3: Combine the Salad

Pour the dressing over the salad ingredients and gently toss to coat everything evenly without mashing the avocado.

Step 4: Chill for Flavor

Let the salad sit for 10–15 minutes in the refrigerator so the flavors blend together.

Step 5: Serve
