1 cup Grits
4 cups water or chicken broth
2 tablespoons Butter
1 cup shredded Cheddar cheese
½ cup milk or cream

For the Fried Fish
2–3 fillets white fish (such as Tilapia or Catfish)
½ cup cornmeal
½ cup all-purpose flour
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
1 egg
2 tablespoons milk
Oil for frying
Optional Additions
Chopped green onions
Hot sauce or chili flakes
Crispy bacon bits

Instructions
- Cook the Grits
In a saucepan, bring water or broth to a boil. Slowly whisk in the grits while stirring constantly. Reduce heat to low and cook for 15–20 minutes, stirring occasionally. - Make Them Creamy
Add butter, milk, and shredded cheddar cheese. Stir until melted and smooth. Season with salt and pepper. - Prepare the Fish
Pat the fish fillets dry. In a bowl, whisk together the egg and milk. - Mix the Coating
In another bowl, combine cornmeal, flour, paprika, garlic powder, salt, and pepper. - Coat the Fish
Dip each fish fillet in the egg mixture, then coat evenly with the cornmeal mixture. - Fry the Fish
Heat oil in a skillet to 175°C (350°F). Fry the fish for 3–4 minutes per side until golden brown and crispy. - Drain
Place fried fish on paper towels to remove excess oil. - Serve
Spoon creamy grits onto plates and place the crispy fried fish on top. Garnish with green onions or parsley.
Tips for Success
Use medium or stone-ground grits for better texture.
Don’t overcrowd the pan while frying the fish.
Add a little butter on top of the grits just before serving.
