🍗 Creamy Mushroom Smothered Chicken

🛒 Ingredients
Chicken:
4 boneless, skinless chicken breasts (or thighs)
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
2 tbsp olive oil
Mushroom Gravy:
2 tbsp butter
8 oz (225g) mushrooms, sliced
3 cloves garlic, minced
1 small onion, finely chopped
2 tbsp all-purpose flour
2 cups chicken broth
1/2 cup heavy cream (optional for creamier sauce)
1 tsp Worcestershire sauce
1/2 tsp dried thyme
Salt & pepper to taste
Garnish:
Fresh parsley, chopped
👩🍳 Instructions
- Season & sear the chicken
Season chicken with salt, pepper, and paprika.
Heat olive oil in a pan over medium-high heat.
Sear chicken 4–5 minutes per side until golden (not fully cooked).
Remove and set aside. - Cook mushrooms
In the same pan, melt butter.
Add mushrooms and cook until browned and tender.
Stir in onion and garlic; cook until fragrant. - Make the gravy
Sprinkle flour over the mushroom mixture and stir for 1 minute.
Gradually add chicken broth while stirring to avoid lumps.
Add cream (if using), Worcestershire sauce, thyme, salt, and pepper.
Simmer until thickened. - Combine & bake
Place chicken in a baking dish.
Pour mushroom gravy over the top.
Bake at 180°C (350°F) for 20–25 minutes, until chicken is cooked through. - Serve
Spoon extra sauce over the chicken.
Garnish with parsley.
