🍋 No-Bake Lemon Cheesecake Bars

🛒 Ingredients
Crust:
2 cups graham cracker crumbs
1/2 cup (115g) melted butter
2 tbsp sugar
Lemon Cheesecake Filling:
16 oz (450g) cream cheese, softened
3/4 cup powdered sugar
1/2 cup fresh lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
1 cup heavy whipping cream (cold)
Optional Topping:
Lemon slices or zest
Whipped cream
👩🍳 Instructions
- Make the crust
In a bowl, mix graham cracker crumbs, melted butter, and sugar.
Press firmly into a lined 8×8-inch (20×20 cm) pan.
Chill in the fridge for 15–20 minutes to set. - Prepare filling
Beat cream cheese until smooth.
Add powdered sugar, lemon juice, zest, and vanilla.
Mix until creamy. - Whip cream
In a separate bowl, whip cold heavy cream until stiff peaks form. - Combine
Gently fold whipped cream into the lemon mixture until light and fluffy. - Assemble
Spread filling evenly over the chilled crust.
Smooth the top. - Chill
Refrigerate for at least 4 hours (or overnight) until firm. - Serve
Slice into bars and garnish as desired.
