🥩 Southern Smothered Steak & Onion Gravy

🛒 Ingredients
Steak:
1½–2 lbs (700–900g) cube steak or round steak
Salt & black pepper, to taste
1 tsp garlic powder
1 tsp paprika
1/2 cup all-purpose flour (for dredging)
For Cooking:
3 tbsp vegetable oil or bacon grease
Onion Gravy:
2 large onions, sliced
2 cloves garlic, minced
2 tbsp butter
2 tbsp flour
2 cups beef broth
1 tsp Worcestershire sauce
1/2 tsp dried thyme (optional)
Salt & pepper to taste
👩🍳 Instructions
- Season & dredge
Season steak with salt, pepper, garlic powder, and paprika.
Lightly dredge in flour, shaking off excess. - Brown the steak
Heat oil in a large skillet over medium-high heat.
Cook steak 3–4 minutes per side until browned (not fully cooked).
Remove and set aside. - Cook onions
In the same skillet, add butter.
Add sliced onions and cook slowly until soft and caramelized (10–15 minutes).
Stir in garlic. - Make the gravy
Sprinkle flour over onions and stir for 1–2 minutes.
Gradually add beef broth, stirring to avoid lumps.
Add Worcestershire sauce and thyme.
Simmer until thickened. - Smother & simmer
Return steak to the skillet, nestling into the gravy.
Cover and simmer on low heat for 30–40 minutes, until steak is tender. - Serve
Spoon onion gravy generously over the steak.
