🍑 Peaches & Cream Cheese Loaf

🛒 Ingredients
Loaf Batter:
1 1/2 cups (190g) all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup (115g) butter, softened
3/4 cup (150g) sugar
2 large eggs
1 tsp vanilla extract
1/2 cup (120ml) milk or buttermilk
1 1/2 cups diced peaches (fresh, canned drained, or frozen thawed)
Cream Cheese Layer:
8 oz (225g) cream cheese, softened
1/4 cup (50g) sugar
1 egg
1/2 tsp vanilla extract
👩🍳 Instructions
- Prep
Preheat oven to 175°C (350°F).
Grease and line a loaf pan. - Mix dry ingredients
In a bowl, whisk flour, baking powder, baking soda, and salt. - Cream butter & sugar
In another bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, then vanilla. - Combine
Add dry ingredients alternately with milk.
Fold in diced peaches gently. - Make cream cheese layer
Beat cream cheese, sugar, egg, and vanilla until smooth. - Assemble
Pour half the batter into the loaf pan.
Spread cream cheese mixture on top.
Add remaining batter and gently swirl with a knife. - Bake
Bake for 50–60 minutes, until a toothpick comes out clean (avoid cream layer).
Cover loosely with foil if browning too fast. - Cool
Let cool completely before slicing.
