3 large eggs, separated
3 tbsp cream cheese, softened
1/4 tsp cream of tartar (or a few drops of lemon juice)

Place egg whites in one bowl and yolks in another. - Mix yolks
Beat egg yolks with cream cheese and salt until smooth and creamy. - Whip whites
Add cream of tartar to egg whites.
Beat until stiff peaks form (very important for fluffiness). - Fold gently
Gently fold egg whites into yolk mixture in batches.
Don’t overmix—keep it airy. - Shape
Spoon mixture onto baking sheet into small rounds or one loaf shape. - Bake
Bake for 25–30 minutes until golden and set. - Cool
Let cool completely before removing—they firm up as they cool.
