🛒 Ingredients
2 tbsp butter
1 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
2 cups cooked chicken, shredded or cubed
4 cups chicken broth
1 cup heavy cream
1 cup milk
1½ cups pasta (penne, rotini, or small shells)
1 cup freshly grated Parmesan cheese
1 tsp Italian seasoning
½ tsp salt (adjust to taste)
½ tsp black pepper
½ tsp paprika (optional, for warmth)
1 cup spinach (optional, for color & freshness)
👩‍🍳 Instructions
Sauté the aromatics
In a large pot, melt butter with olive oil over medium heat. Add chopped onion and cook until soft (about 3–4 minutes). Stir in garlic and cook for another 30 seconds.
Add chicken & broth
Add the cooked chicken and pour in the chicken broth. Bring to a gentle boil.
Cook the pasta
Add pasta and cook according to package instructions until tender.
Make it creamy
Lower the heat and stir in heavy cream and milk. Let it gently simmer (do not boil).
Add cheese & seasoning
Stir in Parmesan cheese, Italian seasoning, salt, pepper, and paprika. Mix until smooth and creamy.
Finish it off
Add spinach if using and cook until wilted (about 1–2 minutes).
Serve warm
Ladle into bowls and top with extra Parmesan and cracked pepper.
💡 Tips
Use rotisserie chicken for extra flavor and convenience
If soup thickens too much, add a splash of broth or milk
For extra richness, stir in a little cream cheese
