🥣 Homemade Beef Vegetable Soup
Ingredients:
1 lb (450g) beef stew meat (cut into bite-sized pieces)
2 tbsp olive oil
1 small onion, chopped
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
2 potatoes, peeled and diced
1 cup green beans (fresh or frozen)
1 cup corn (optional)
1 can (14 oz / 400g) diced tomatoes
6 cups beef broth
1 tsp salt (adjust to taste)
½ tsp black pepper
1 tsp dried thyme
1 tsp paprika
1 bay leaf
Instructions:

  1. Brown the beef
    Heat olive oil in a large pot over medium-high heat.
    Add beef and sear until browned on all sides (about 5–7 minutes). Remove and set aside.
  2. Sauté aromatics
    In the same pot, add onion, carrots, and celery.
    Cook for 4–5 minutes until softened.
    Add garlic and cook 1 more minute.
  3. Build the soup
    Return beef to the pot.
    Add potatoes, green beans, corn, diced tomatoes, and beef broth.
  4. Season & simmer
    Add salt, pepper, thyme, paprika, and bay leaf.
    Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes, until beef is tender.
  5. Taste & finish
    Adjust seasoning if needed. Remove bay leaf before serving.
